Hybrid Microwave Frying Could Slash Fat Content in French Fries
Engineering researchers at the University of Illinois have developed a dual-heat frying method that uses microwave energy to block oil absorption. This hybrid technique maintains a crispy texture while significantly reducing the caloric load of fried potatoes.
The Physics of Pressure and Oil Absorption
Traditional frying often results in high fat content because of how internal pressure shifts during the cooking process. Principal investigator Pawan Singh Takhar and doctoral researcher Yash Shah from the University of Illinois Urbana-Champaign found that nearly 90% of frying occurs under negative pressure. As water within the potato turns to steam and escapes, it creates a vacuum effect that pulls soybean oil into the remaining pores. To counter this, the team utilized a specialized microwave fryer developed with Washington State University that operates at 2.45 GHz and 5.8 GHz frequencies.
How Microwave Energy Blocks Fat Entry
Unlike conventional ovens that heat from the exterior inward, microwaves penetrate the entire food material simultaneously. This rapid oscillation of water molecules generates steam throughout the potato strip, maintaining positive internal pressure for a longer duration. This outward pressure acts as a barrier, preventing oil from being sucked into the center. During the study, researchers prepared potato strips by peeling, rinsing, blanching, and salting them before frying at 180 degrees Celsius. By tracking moisture loss and internal pressure, the team confirmed that microwave energy shifts the pressure profile to keep the oil out.
The Necessity of a Hybrid Cooking System
While microwave energy effectively lowers oil intake and speeds up cooking times, it cannot satisfy consumer expectations for texture on its own. The research, published in two recent studies, indicates that microwave-only frying results in a soggy product. To achieve the signature crunch, the researchers propose a hybrid unit that combines microwave energy with conventional frying. This dual approach uses traditional oil heat to brown and crisp the surface while the microwave component manages the internal moisture and oil uptake.
