Centuries of Craft: How a Tamil Nadu Ghee Giant is Reimagining Institutional Heritage

From Village Collection to Global Distribution

The industrial heart of Kangayam, located 95 kilometers from Coimbatore, houses an 80,000-square-foot facility where 200 laborers manage the transformation of milk into sunshine-yellow ghee. This 94-year-old enterprise, RKG Ghee, traces its origins back to the 1920s. Managing partner G Aravind notes that the founders initially sourced butter from local villages like Padiyandipalayam and Madathupalayam, transporting the finished product by bullock cart. Today, the scale is far larger, with the company sourcing 150,000 liters of milk every day from a network of 10,000 farmers near Dharapuram.

The Science of the Four-Day Clarification

The production cycle at the RKG plant requires exactly four days of thermal monitoring and settling to achieve the product's signature grainy texture. Plant manager K R Prakash oversees a rigorous technical sequence:

  • Thermal Preparation: Bulk butter is stored at -20°C before being thawed to ambient temperatures.
  • Clarification: Molten butter enters 2,000-liter stainless-steel boilers; after 20 minutes, the liquid moves to settling tanks to separate protein solids.
  • Refinement: The liquid passes through a clarifier and rests for 48 hours to develop its distinct physical consistency.
  • Packaging: An automated conveyor system handles everything from 15-kilogram commercial tins to 0.09-ml sachets, with staff performing final quality inspections on seals and caps.

Pioneering Ghee Tourism in Kongu Nadu

Seeking to evolve beyond traditional manufacturing, 31-year-old fourth-generation descendant K R Vikneswaran has launched 'RKG Ghee Stories.' This experience center functions as an educational hub where visitors observe a miniature version of the factory's clarification process. This initiative introduces 'ghee brewery' concepts to the region, blending transparency with culinary outreach.

Complementing the industrial demonstration is a restaurant that highlights the ingredient's versatility through a fusion menu. The facility serves regional staples like arisi paruppu sadham alongside modern interpretations such as ghee mushroom cappuccino and nei kathirikkai. By merging heritage production with hospitality, the brand aims to solidify its presence across South India and export markets including West Asia, North America, and Oceania.
